Mini Burger Cookies

Thought it was time for a food post and I had to share these. Aren't they adorable? I found these in a Betty Crocker Best Cupcakes & More cookbook. Three of my four kids took some to school to share with their classmates.





Ingredients
1pouch Betty Crocker sugar cookie mix
3 Tbsp all purpose flour
1/3c marg or butter, softened
1 egg
2 Tbsp flaked coconut
few drops green food color
1/2c Betty Crocker Rich & Creamy vanilla frosting
16 chocolate covered peppermint patties (1.5oz each), unwrapped
1 can (6.4oz) Betty Crocker Easy Flow red decorating icing
1 can (6.4 oz) Betty Crocker Easy Flow yellow decorating icing
1 tsp honey
1 tsp water
2 tsp sesame seed

Directions
1. Heat oven to 375 degrees. In medium bowl, stir cookie mix, flour, butter and egg until soft dough forms. Shape dough into 32 (1 inch) balls. On ungreased cookie sheets, place balls 1 inch apart. Bake 10-12 minutes or until set and edges are light golden brown. Cool 1 minute; remove to cooling racks. Cool completely.
2. In small resealable food-storage plastic bag, place coconut; add food color. Seal bag; shake until coconut is evenly tinted. Spread scant teaspoon vanilla frosting on bottom of each cookie. For each burger, place 1 peppermint patty on frosted side of 1 cookie. Pipe red and yellow icing on peppermint patty for ketchup and mustard. Top each with about 1/2 teaspoon green coconut for lettuce. Top with second cookie, frosting side down; gently press together.
3. In small bowl, mix honey and water.Brush on tops of cookies; sprinkle with sesame seed.
